For years, Larb Gai is a must-eat appetizer (or can also be a light lunch/dinner) anytime we go to a Thai restaurant, and after a few rounds of research & experimenting, I nailed it (for our taste at least)! I used Ground Turkey instead of Ground Chicken, as I couldn't get the consistency right - the chicken seemed to turn pastey. I also serve with tender cabbage leaves instead of the traditional lettuce so I can pack more in! Quick, healthy & easy, this is a delight for your taste buds! Chicken is my favorite food in the world. There are a number of recipes that you can do with the chicken. Of course, there are lots of other food who can compete with it, but it is just the best thing in the world. I hope that I get to eat chicken as much as I want. I will never have a good life if I could not eat chicken, in fact, I will probably end up dead before I do that.
