This is remarkably versatile - I used quinoa, radishes, green onions, grape tomatoes and jalapeños to complete this amazing charred broccoli, but you can use any grain and add any veggies you may like. I also included SoftBoiled Eggs as it's delicious to break that yolk into the bowl! I've included only the instructions for the dressing and Charred Broccoli to let you flex as wanted - would definitely include an Ancient Grain, and some crunchy veggies as you enjoy the most! My obsession with this dip began with the Bistro Fries at Nordstrom's Bistro (is there a better reward after a long day of spending lots of money?) and continued with the Crudite at True Food Kitchen. Easy to make, I've tweaked over the years, and we now very much enjoy this as a snack before dinner, or sometimes, even dinner! It's also a great way to get rid of some small leftovers (for example, chicken, any ancient grain you have already made such as quinoa or couscous) and work through some veggies before you go grocery shopping! For years, Larb Gai is a must-eat appetizer (or can also be a light lunch/dinner) anytime we go to a Thai restaurant, and after a few rounds of research & experimenting, I nailed it (for our taste at least)! I used Ground Turkey instead of Ground Chicken, as I couldn't get the consistency right - the chicken seemed to turn pastey. As they say in my country, Buen Provecho! I LOVE Potato Gratin, but hate the unhealthy nature of it (I mean, we don't really need all that butter, cream and cheese, right?). This recipe is a modification of our Grand Master, Julia Child, and combines Herbs de Provence with tomatoes and a minuscule amount of cheese (which you could leave out if so inclined) to make a healthy side dish that may become the star of your meal.
