This is remarkably versatile - I used quinoa, radishes, green onions, grape tomatoes and jalapeños to complete this amazing charred broccoli, but you can use any grain and add any veggies you may like. I also included SoftBoiled Eggs as it's delicious to break that yolk into the bowl! For years, Larb Gai is a must-eat appetizer (or can also be a light lunch/dinner) anytime we go to a Thai restaurant, and after a few rounds of research & experimenting, I nailed it (for our taste at least)! I used Ground Turkey instead of Ground Chicken, as I couldn't get the consistency right - the chicken seemed to turn pastey.
