You know I love Risotto, but I hate the calories that come with the typical cream and cheese - plus the preparation of it, which requires endless standing by the stove. Using Barley, and a handful of items in your fridge, you can make this delicious, healthy version of Risotto using Ancient Grains! I also topped with Shrimp for our pescatarian friends joining us. Hope you enjoy! Ingredients

This is remarkably versatile - I used quinoa, radishes, green onions, grape tomatoes and jalapeños to complete this amazing charred broccoli, but you can use any grain and add any veggies you may like. I also included SoftBoiled Eggs as it's delicious to break that yolk into the bowl! I've included only the instructions for the dressing and Charred Broccoli to let you flex as wanted - would definitely include an Ancient Grain, and some crunchy veggies as you enjoy the most! Dressing
Instructions: Whisk lemon juice, garlic and salt. Let sit for 1 minute, then whisk in oil in steady stream, until emulsified. Is using, whisk in tahini and set aside. Charred Broccoli

Serve in bowl with all the crunchy veggies, soft-boiled egg, etc. As they say in my country, Buen Provecho! My obsession with this dip began with the Bistro Fries at Nordstrom's Bistro (is there a better reward after a long day of spending lots of money?) and continued with the Crudite at True Food Kitchen. Easy to make, I've tweaked over the years, and we now very much enjoy this as a snack before dinner, or sometimes, even dinner! Photographed here with sliced Radishes, Carrots, Celery, Brussel Sprouts and Purple Cabbage. You can make this vegan or vegetarian (see notes in recipe). Serve with French Fries (as they do at the Nordstrom Bistro), or as a dip for a Crudite, or even as a smear on a sandwich - this really goes with anything! Time: 10 minutes Ingredients:
Instructions: Blend all the ingredients in a food processor or using an immersion blender. To store, place in an airtight container - it should keep a few weeks. Serve with French Fries (as they do at the Nordstrom Bistro), or as a dip for a Crudite, or even as a smear on a sandwich - this really goes with anything! Summer. Fresh Tomatoes, Herbs, and every other form of goodness! This sauce is perfect for a quick but hearty weeknight dinner with pasta, or for my deconstructed eggplant parmigiana, or to just enjoy with a nice loaf of bread. I mean, can we all just admit that tomatoes (especially my in-laws) are the absolute best? Prep Time: 10 minutes | Cook Time: 30-45 minutes Ingredients

If making to get through tomatoes you have, this recipe freezes beautifully. Even better! As they say in my home country, buen provecho! I love Eggplant Parmesan, but I know it's not the healthiest. I've created this dish, which combines the extraordinary summer flavors of summer in the Eggplant, but also combines it with lovely summer tomatoes in a healthy recipe that'll be on the table in less than an hour, without the unhealthy calories of cheese. Pictured above, it's served with a lemony simple side salad to delight your senses (and go easy on the scale!). Serve as entree or side dish. As they say in my country, Bueno Provecho! This salad is a perfect, ultra-healthy and quick way to get rid of summer garden vegetables! It combines the flavors of the Mediterranean with a staple of every summer farmer's market or garden! Endlessly flexible, you can add or take things out to make this your own and adjust for dietary restrictions. Let me know what you think! Ingredients:

As they say in my country, Bueno Provecho! This salad is healthy, filling and refreshing! It's also a great way to get rid of some small leftovers (for example, chicken, any ancient grain you have already made such as quinoa or couscous) and work through some veggies before you go grocery shopping! Perfect for a weeknight dinner or a weekend lunch, you'll be thanking me once you've tasted it! Vegans, opt out of the Feta and Chicken (you can always add baked tofu, but the beans should provide a good protein level for your nutrition). Time - 15-30 minutes (depending on whether you need to prepare ingredients or not). Ingredients
As they say in my country, Buen Provecho! Harissa, if you're not familiar with it, is a Tunisian spread which adds a heat-laden explosion of flavors to any meal. While you can buy in a tube, the homemade version is so much healthier and fresher, and will keep for well over a month in the refrigerator. Among other uses, I smear a small amount on sandwiches, or a small dollop in stews or sauces to add complexity and a bit of heat. Fair warning: a little goes a long way! Ingredients:

I love my go-to recipe for overnight bread, but this morning, I was craving some homemade bread and hadn't gotten around to prepping it last night, so I went to one of my other go-to's - beer bread enhanced with kalamata olives (although you can do so with anything else you may be feeling like including, such as herbs, etc). Try this and let me know what you think! Total Time (including cooking) - 1 hour Ingredients

As they say in my country, Buen Provecho! I LOVE Potato Gratin, but hate the unhealthy nature of it (I mean, we don't really need all that butter, cream and cheese, right?). This recipe is a modification of our Grand Master, Julia Child, and combines Herbs de Provence with tomatoes and a minuscule amount of cheese (which you could leave out if so inclined) to make a healthy side dish that may become the star of your meal. I'd encourage you to use a Cuisinart Food Processor to make your lives so much easier on this this one! Notes include suggested modifications for Vegans. Bon Appétit! Total Time - 1 1/2 hours (including cooking) Ingredients

As Julia used to say, Bon Appétit! Or as they say in my country... Buen Provecho! Notes: For Vegans, you can omit cheese and replace anchovies with capers (about 1/3 cup, mashed). |
